100 g of brown sugar
130 g of butter
A sachet of vanillin

The breakfast cookies should be sweet, crumbly and keep for a few days. Preparing excellent breakfast cookies is easy, but depending on your tastes, you can enrich them with chocolate chips, raisins or candied fruit. Breakfast cookies are also perfect for snacks or for all those times when you feel like a little sweet bite.

Here's how to prepare homemade breakfast cookies with a light and delicious shortcrust pastry.

Procedure

Put the sifted flour on a work surface and make a well, add the butter in pieces, the sugar, the yolks and a pinch of salt. Also add the vanillin.

Work the dough quickly, form a ball and wrap it in cling film. Let the mixture rest in the refrigerator for 30 minutes.

At this point, between two sheets of parchment paper, with the help of a rolling pin, roll out the dough to a thickness of 5 mm. Cut out the cookies according to your preferred shape. Use cookie cutters or molds to unleash your imagination, but consider that a simple glass will do just fine.

Put the cookies on a baking sheet covered with parchment paper and bake at 180°C for 15 minutes.

Storing these delicious breakfast cookies is very simple: by placing them in a tin box, they will be like freshly baked for 3-4 days!
