5 extra fresh large AIA eggs
200 g of 00 flour
200 g of sugar
16 g of yeast
70 g of bitter cocoa powder
50 ml of milk
100 g of butter
Icing sugar (optional)

Description

First, separate the yolks from the whites and whip the latter until stiff. Also whip the yolks together with the sifted sugar for about a quarter of an hour. Also add the butter, milk and continue to mix well. Then also add the flour and cocoa that you have previously sifted. Now add the whipped egg whites and the sifted yeast, mixing well and taking care not to deflate the egg whites (mix from bottom to top).

Now butter a cake pan and line it with baking paper inside which you will pour the mixture just obtained. Bake the cake in a preheated oven at 160°C for about 50 minutes.
