Procedure

1

Heat a drizzle of extra virgin olive oil in a high-sided casserole, then pour a glass of white wine and bring to a light boil.

2

Place the BonRoll in the casserole and cook it over low heat, covered, for 90 minutes making sure to turn it on all sides so that the cooking is uniform.

3

In the meantime, take care of the potatoes: peel them and cut them into pieces, then soak them in a bowl full of cold water for about 10 minutes, in order to let out part of the starch contained in them and facilitate their cooking.

4

In a separate bowl, mix the breadcrumbs with the cheese, the chopped thyme, a pinch of salt and a pinch of pepper; after the necessary minutes, drain the potatoes well and bread them in this mix of breadcrumbs and cheese.

5

Transfer the sandy potatoes, therefore, on a baking sheet covered with parchment paper, season them on the surface with a little extra virgin olive oil and bake them at 180°C for 30 minutes, turning them a couple of times during cooking.
