In this tasty preparation, the zucchini tagliatelle are crunchy and marry perfectly with the softness and flavor of Wudy AIA, while the arugula pesto gives a natural spiciness to everything.

Procedure

Cut the zucchinis with the peeler to form tagliatelle. In the mixer glass put the washed arugula, some almonds, a pinch of salt, pepper and a tablespoon of grated cheese.

Blend and add the oil in a thin stream until you get a pesto. Season the tagliatelle with a drizzle of oil and very little lemon juice.

Grill Wudy AIA until fully cooked and cut them into rounds (or diamonds). With a spoon, put a few drops of pesto on the zucchini tagliatelle, add the Wudy AIA and the yellow peppers deprived of seeds and white filaments and cut into strips.
