Description

The stracciatella in broth is a traditional Italian recipe that originates in Rome. This dish represents the classic winter comfort food to bring to the table when the whole family craves warmth and authentic flavors.

To prepare a perfect stracciatella in broth there are two rules to follow: use fresh eggs and a excellent chicken broth.

Alternatively to chicken broth, you can use meat broth, in any case it is a very quick recipe to prepare with few ingredients. Here's how to do it!

Procedure

Prepare the chicken broth and bring it to a boil after having carefully filtered it. In the meantime, put the eggs and the grated cheese in a bowl, adjust with salt and pepper and mix well with a fork like the classic base for the frittata.

When the broth has reached a boil, pour in the egg mixture and stir with a whisk for a few minutes to shred the eggs, preventing them from solidifying.

After a couple of minutes your stracciatella in broth is ready, serve it hot.
