Description

Procedure

Put the sifted flour on a pastry board forming a fountain: in the center put the sugar, the grated zest of half a lemon and the salt. Cut the butter into small pieces and add it to the other ingredients. Remember that the butter must be very cold. Start working the mixture using only the tips of your fingers, then add two yolks, one whole egg and continue to mix all the ingredients quickly until you create a homogeneous dough. Once the dough is formed, wrap it in cling film and let it rest in the refrigerator for thirty minutes.

Peel the persimmons and put the pulp in a colander. Press well so that the fibrous part is separated from the soft part.

Roll out the shortcrust pastry in the pan lined with parchment paper. Fill with the persimmon cream and bake at 180°C for 20 minutes.
