320 g of fusilli
200 g of bacon
4 artichokes
80 g of red onion
White wine
1 lemon
4 tablespoons of extra virgin olive oil
Grated Parmesan cheese (optional)

Description

A perfect recipe for the spring season, a first course to enjoy for a Sunday lunch, also ideal to take to the office: the pasta with artichokes and bacon is deliciously flavorful, as well as tasty!

Procedure

Cut the artichoke hearts in half, remove their classic beard and divide them further into two parts; also take care of the stems and cut them into strips.

Now prepare the sauté: mince the onion and then brown it in a non-stick pan with four tablespoons of extra virgin olive oil. Then add the artichokes, adjust them with salt and pepper and blend with the white wine, letting them cook for 10 minutes.

In the meantime, cut about 200 g of bacon into thin strips and brown it in a pan without adding any seasoning, then add it to the artichokes and continue cooking all the ingredients over low heat.

Boil a pot with plenty of salted water and prepare the pasta. Once drained, add it to the sauce and sauté it in the pan for a minute or two. Finally, if you want, flavor it with a sprinkle of grated Parmesan cheese.

Suggestions

The first thing to do to prepare the pasta with artichokes and bacon is to clean the artichokes themselves: get some gloves and cut them by removing the outer leaves, the hardest ones, until you reach the heart, eliminating the stem.
