Put the AIA turkey thigh slices in a container with oil, chopped parsley, rosemary, thyme, sage, lemon juice, salt, and pepper. Mix with your hands to cover the meat, cover with a film and let it marinate for an hour.

Oil a baking dish and arrange the turkey slices. Season with wine, oil, and a peeled clove of garlic. Bake in a hot oven at 200° for about 1 hour and a quarter. Halfway through cooking, moisten with half a glass of white wine and turn the slices.

Prepare a sauce by browning the butter and shallot in a saucepan. Deglaze with white wine and add the sifted flour, toasting for 30 seconds. Pour the filtered turkey cooking base and the broth and reduce the sauce.
