Procedure

Finely cut the fennel with a mandolin and put the slices in a bowl with water and ice.

Peel the orange to the flesh, remove the ends with a knife and also remove the peel with the same knife.

Remove the white filaments from the segments, pit the olives and cut them in half.

Prepare the citrus sauce by putting the lemon juice, grapefruit and orange in a bowl.

Add the oil in a thin stream and whisk until you get an emulsion.
