Procedure

To prepare the chicken with vegetables you will first need to prepare the chicken: you can use chicken quarters, but also the whole chicken is suitable for this preparation. You will just need to cut the chicken with a bit of care, but you will have an even richer dish.

You can start preparing the chicken with vegetables and saffron by placing the meat in a large pan with a drizzle of extra virgin olive oil and a clove of garlic. Clean the garlic by removing the skin and, if you want it to release even more flavor, crush it using the palm of your hand: don't worry about the smell, it takes very little to remove the smell of garlic from your hands!

Then put the pan on the stove and brown the chicken quarters very well on all sides at high heat, then deglaze with dry white wine and cook over low heat for 25 minutes adjusting with salt and pepper. Cover the pan with a lid and let the chicken cook: in the meantime, prepare the vegetables.

Wash the vegetables well under running water. Then cut the zucchini and eggplant into cubes. You can then clean the pepper, but if you want to be sure to digest it without problems, you can remove the skin: if you have a microwave this operation will be particularly easy.

Put the peppers in the oven at maximum power for two minutes: then put them in a salad bowl and cover it with plastic wrap. In this way, humidity will be created inside the salad bowl: let the peppers rest in this way for at least five minutes. Then you can easily remove the skin with a knife: cut the peppers into cubes, removing the seeds.

When you have all the vegetables cut, arrange them in the same pan where you have the chicken cooking: add the vegetables when the chicken is well browned outside, but still not fully cooked inside. Dissolve the saffron in a glass of warm water and then pour everything over the chicken and vegetables. Let it finish cooking for another ten minutes: the cooking time of the vegetables changes depending on the size of the cubes you have made.

The larger the cubes, the longer it will take to cook. If during cooking it seems that the chicken is drying out too much, add another drizzle of warm water.

When the chicken with vegetables is fully cooked, you can serve it still hot: you can decorate the dish with fresh raw vegetables cut into julienne.
