400 g of cow's milk ricotta
3 strands of chives

½ glass of white wine
10 radishes
White wine vinegar

This is a truly delicious and very easy to prepare recipe that is perfect for a dinner with friends, but also the ideal and original snack for a aperitif in the garden or a buffet dinner. Here is the complete recipe to prepare the slices of Classic BonRoll with chive ricotta foam and radish pickles!

Procedure

First, pour a little oil and ½ glass of water or white wine into a baking dish. Place the Classic BonRoll in the dish and let it cook in the preheated oven at 180°C for 70 minutes, covering it for the first 50 minutes.

Once ready, let it cool before cutting it into slices about 1 cm thick.

Finely chop the chives with scissors and in a bowl put the ricotta, a pinch of salt, the chives and mix the ingredients with the electric whisk, adding the oil in a thin stream until you get a foamy mixture.

Slice the radishes thinly and put them in a colander. Sprinkle them with salt and let them rest for about 3 hours, stirring them from time to time.

Rinse the radishes and cover them with vinegar. Let them rest for 24 hours. Then drain the radishes from the vinegar before using them.

Pass the slices of BonRoll in a pan with a drizzle of oil until a light crispy crust forms on the surface. On the serving plate, arrange the slice of BonRoll, cover with the ricotta and chive foam.
