This preparation is very simple to make and in a very short time it will allow you to bring to the table all the goodness of the AIA Classic BonRoll and the freshness of ingredients such as avocado, sun-dried tomatoes and feta. It is a perfect recipe to put in the lunch box for lunch break (you will attract the envy of all colleagues) but also ideal to enjoy on the occasion of a lunch or a last minute dinner.

Cut the AIA Classic BonRoll  into slices and cook it in a pan with a drizzle of oil and a sprig of thyme. When the slices of BonRoll are cooked to the right point, remove them from the pan and cut them into cubes. Remove the skin and the inner pit from the avocado and cut it into cubes or slices.

Cut the feta into cubes, peel the onion and slice it. Wash the salad and put it in a bowl, add the BonRoll cubes, the avocado, the sun-dried tomatoes cut into strips, the olives, the onions, the feta and the almonds. Dress the salad with oil, balsamic vinegar, a pinch of salt and a grind of pepper to taste.
