2 packs of AIA Rabbit Sottilissime
100 g of thinly sliced raw ham
Slices of black truffle
Rosemary
2 fennels
2 carrots
1 celery stalk
Half an onion
Extra virgin olive oil
Half a glass of white wine
Salt
pepper

Description

If you are already thinking about your Easter menu and want to introduce some variations on the most traditional recipes, the baked rabbit rolls will be a tasty solution. The meat rolls, and in particular those of rabbit, will satisfy the whole family, starting with the little ones. The baked rabbit rolls can be accompanied by light side dishes, salads or baked potatoes. Like chicken rolls, rabbit rolls can also be prepared in a pan, but if you have a few extra minutes, the oven will make the recipe even more flavorful.

Procedure

Place the rabbit slices on a surface and sprinkle them with a pinch of salt and a grind of pepper, then roll them up and wrap them with the raw ham. Put a slice of truffle on each rabbit roll and secure it with a sprig of rosemary, then tie the rolls with kitchen string or skewer them with wooden sticks.

Clean the fennels by removing the toughest outer leaves and then cut them into wedges, peel the carrots and cut them into coarse slices.

Peel the onion and cut it into pieces, then do the same with the celery. In a baking dish, add a drizzle of extra virgin olive oil and add the rolls and vegetables. Bake at 200°C for 5 minutes, then deglaze everything with the wine, adjust the salt and pepper and continue cooking for 10 minutes at 180°C.
