Cook the Precut AIA Rabbit this way:
Rabbit Pieces with Eggplant
Preparation time: 2 hours
For 4 people
cut the eggplant into pieces; salt and let them drain for 1 hour. Brown the rabbit in oil and butter; salt and pepper to taste.
Dry the eggplant pieces on a towel; when the rabbit is nicely browned, add the eggplant and the garlic.
Let the flavours blend briefly, then add the tomato and cook over low heat for 45 minutes. Add water if necessary during cooking.
