Celebrate the Christmas season with an AIA Tacchinella in a casserole.
Truss the turkey’s legs and place it in a high-rimmed pan, lightly oiled.
Stuff the AIA turkey with a little rosemary, some sage leaves and prosciutto cut into strips; cover the outside with a few strips of pancetta and some bay leaves.
Salt to taste and place in the oven. Cook at medium heat, basting occasionally with the cooking juices.
When it starts to brown, add a cup of white wine. When the turkey is done, remove from the oven and serve.
