Cut the potatoes, courgettes and pumpkin into fine slices using the mandolin slicer. Pat the vegetables dry with absorbent kitchen paper. Then fry them in the deep fryer or in a frying pan with plenty of vegetable seed oil. Now drain the crisps on a sheet of oil absorbing cooking paper. Grill the skewers and then arrange them in the centre of a serving dish surrounded by the crisps and season with a pinch of salt. Alternatively, the crisps may also be prepared in the oven and, in this case, there is no need to use the vegetable seed oil for frying!
