PROVENÇAL-STYLE ROAST CHICKEN WITH VEGETABLES
Here is the perfect recipe of a Provençal-style chicken roasted with vegetables!
1 Aia Chicken
500 g mixed vegetables (courgettes, peppers, carrots, spring onions)
Extra-virgin olive oil
3 cloves of garlic
2 laurel leaves
Salt to taste
Pepper to taste
Season the chicken with salt and pepper inside and out, coat it with oil and place it in an oven dish. Add garlic and rosemary to taste.
Cook at 190° for at least an hour. To check if the chicken is ready, pierce it with a skewer: the liquid that runs out should be clear.
Cut all the vegetables into pieces, season with salt, oil, thyme, oregano and laurel. Mix well, add ½ a glass of water and place in an oven dish. Cook in the oven for 25-30 minutes at 180°.
Serve the chicken with the vegetables.
