240 g basmati rice
3 courgettes
1 red peppers
2 spoonfuls curry powder
a handful of cashews
1 shallot
2 cloves
2 small sage leaves

Today we are presenting a fabulous recipe for a one course meal that is both light and spicy, ideal for those who love ethnic flavours and aromas: curried chicken strips with courgettes. This dish is perfect for rustling up a last minute lunch or dinner or the ideal lunchbox filler for an original and alternative midday break.

Cook the basmati rice in a pan of boiling salted water with the addition of a few cloves. Wash the courgettes, trim the ends and dice them. Wash the peppers, remove the seeds and filaments and then dice them evenly. Pan toss the vegetables with a little oil, salt and pepper. Let the vegetables cook for a few minutes.

Roast the cashews in a frying pan with a couple of sage leaves. Slice the AIA Sottilissime chicken into fine strips. Take a frying pan and gently fry the chopped shallot in oil, add the curry and, after a few seconds, add the chicken strips. Season with salt and pepper to taste and remove from the heat after a few minutes. Separate the basmati rice grains using a fork and fill the food mould. Place the vegetables on top of the rice, followed by the chicken in its curry sauce. Enjoy!
