Chicken with olives

1 pack of AIA chicken joints
1 clove of garlic
1 sprig of rosemary
1 glass of dry white wine
2 spoonfuls of stoned Taggia olives
Extra virgin olive oil
As delicious as roast chicken and as irresistible as fried chicken, this simple dish of chicken with olives has loads of character. Its flavour is unbeatable and it makes the perfect dish for a Sunday lunch, as well as an ideal solution for an office lunch!

Using a wide shallow pan, gently fry a clove of garlic with a sprig of rosemary in extra virgin olive oil before adding the chicken pieces. Cover with the lid and brown the chicken over a lively heat. After a few minutes, turn the chicken joints over, pop the lid back on and after 3 minutes sprinkle with the white wine and let it evaporate.
Season with salt and pepper to taste, remove the rosemary and lower the heat. Let the chicken simmer gently for 20 minutes, taking care to turn it over from time to time so that it cooks through evenly. Now add the Taggia olives, stir and cook for a further 10 minutes.
Now that your chicken with olives is ready, you can serve it with a nice fresh salad, roast or mashed potatoes.
