In a non-stick frying pan, heat a small amount of EVO oil with a garlic clove. When sufficiently hot, add the button mushrooms previously trimmed and sliced. Season with a pinch of salt and mix every now and then. When cooked, remove the mushrooms from the pan and set aside.
Now, using the same pan, brown the chicken previously cut into pieces and take care to turn frequently until golden brown. Sprinkle the chicken with the white wine, letting it evaporate before you add the chopped tomatoes. Season with a pinch of salt and cook for about 20 minutes, with the pan lid on. When the chicken is perfectly cooked, add the mushrooms and serve with a sprinkling of chopped parsley. Enjoy!
