2 packs of AIA chicken breast slices
4 sage leaves
2 sprigs of rosemary
2 sprigs of thyme
a few marjoram leaves

What makes this recipe truly unique is the fact that red onion, with its natural piquancy, establishes a perfect balance between the sweetness and acidity of oranges, while fresh herbs give this dish the unmistakable fragrance typical of Mediterranean cuisine. Finely chop the herbs and place them in a bowl with the extra virgin olive oil, honey and the chicken. Marinate the AIA Chicken Breast Slices for 30 minutes. In the meantime, use a knife to remove the peel and pith of the orange and place the orange segments in a small salad bowl. Peel the red onion and slice it into very fine rounds and then add it to the oranges together with the olives and a few parsley leaves.
Dress the salad with a trickle of extra virgin olive oil, salt and freshly ground black pepper. Heat the pan and gently fry the chicken together with its marinade. After a couple of minutes, turn the chicken slices over and cook them on the other side for a further 2 minutes before seasoning with salt and pepper. Serve the herb-flavoured chicken slices with the orange salad.
