Here is the quick and easy recipe for burger with mint-flavoured aubergine tartare, cherry tomatoes and dressed mozzarella! Wash the aubergines, dry them, trim the ends and dice, without removing the outer skin. Toss the diced aubergines in a pan with a drizzle of oil, and then add a sprinkling of vinegar, salt, pepper and mint. Dice the mozzarella and dress it with oil, salt, pepper and oregano.
