First of all, boil the black venere rice in a saucepan with plenty of salted water. When cooked, strain and set aside to cool. Dice the AIA chicken breast and cook it in a frying pan with a drizzle of EVO oil and the shallots. Sprinkle with the white wine and continue to cook for another 15 minutes approximately. Season with a pinch of salt and pepper.
Wash the courgettes and cut them into smallish pieces. Pan toss with a little EVO oil for a few minutes. Now dress the venere rice with a drizzle of oil and the lemon juice, before adding the chicken, courgettes, basil and mint. Stir well and serve!
